Chicken Schnitzel...

... with Chicken Flavored Rice and Brussel Sprouts!!!


Schnitzel:(click on "schnitzel" to learn more about it)
3-4 chicken breast fillets "pounded"
salt and pepper
flour for coating
2-3 cups Panko breading medium course crumbs
2 eggs beaten well with 1 tbsp oil
oil for frying


Put flour on plate, Panko on another plate, and eggs into a bowl. Coat chicken with flour, dipped into the egg mixture, dredge through the Panko bread crumbs. Put into pre-heated frying pan with oil for cooking.




Cover plate with a few sheets of paper towels for chicken to drain and cool after cooking.





We used Honey Mustard Sauce for dipping and it tasted FABULOUS!!!

Rice:
3 cups water
1/2 cups rice
3 Bullion
Parsley




The bullion jar says 1 cube of bullion to 1 cup of water. Place those in the water before it starts to boil and add a few dashed of parsley to tasted. (I didn't add enough but it was a learning experience). Continue cooking as you would normal rice. (I wouldn't use one minute rice...We get Costco size bags of rice and then put them in smaller containers.)

Brussel Sprouts:
Rinse sprouts
Cut off the bottom stem
Take off the first layer or so of leaves
De-pit the stem like you would with lettuce




Most of you have your own way that you steam your veggies, but I had to share this new discovery. We use a Pampered Chef Steamer when we make peas and I didn't want to cook brussel sprouts the long way. So we decided to try them in our microwave steamer!



Discovery... ... ... ...


You're can successfully steam Brussel Sprouts in the microwave for 5-6 min. Just add enough water to almost cover!!!

The Final Product!

Now you can also make this with Angel Hair and Marinara or Spaghetti Sauce and then top with shredded Asiago Cheese and you have another fabulous dinner!

Honey Mustard Sauce

3/4 cup mayonnaise
3 tablespoons honey
2 tablespoons yellow mustard
1 tablespoon lemon juice or juice from 1/2 lemon
horseradish, to taste (we don't use)
2 tablespoons orange juice (more or less as needed)

Combine all ingredients EXCEPT orange juice; stir well. (I screwed this up... use the orange juice for tiny bit of flavoring after mixing. Kind of like your secret ingredient) Thin to pouring consistency for dressing or dipping consistency for dips with orange juice. Cover and chill for 2 or 3 hours. (we usually only chill for 1 hour)

Loaded Mashed Potatoes

Classic Mashed Potatoes
Indregients
3 lbs russet potatoes
1/4 cup real butter
1/4 cup (plus more if necessary) milk
Salt and freshly ground black pepper


Directions
1) Cut the potatoes into 1/2 inch pieces


2) Bring large pot of salt water to boil. When the water boils, add the potatoes and cook until tender

3) Drain and place potatoes in large mixing bowl add butter and beat with an electric mixer until butter is melted and incorporated into potatoes


4) Slowly add in milk starting with the 1/4 cup and add more until desire consistency. Season with salt and pepper.


To Make Then Loaded:
Ingredients:
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon round pepper
1/4 garlic powder
1/2 shredded (sharp) cheese
1/4 slice green onions
Bacon Bits (either store bought or make from real bacon)

Directions:
Cook the potatoes as the Classic suggests. Whip the potatoes, butter, sour cream, salt. pepper. and garlic powder. Fold in the remaining ingredients by hand. Reserve 2 tablespoons of the bacon to top the potatoes when serving.


Now. this is obviously more then enough for the two of us, so we cut a lot of it in half and didn't completely go to the extreme of using every ingredient. It tasted amazing though.

To make the meal a whole, we bought a pre-made chicken at Walmart and added peas (of course) and Pillsbury Crescents.




Lemon Pepper Chicken is my favorite.

Chicken Crepes

This is another one of those dinners that doesn't exactly look appetizing but it sure does taste great!!!

Crepes


Indredients:

2 cups flour
2 cups milk
6 eggs


Directions:
Cook on low heat in a well greased pan.


Chicken & Cheese Sauce

Ingredients:
1 cube of butter
flour
3 cups milk
2-3 1 inch slices of Velveeta Cheese
Shredded Chicken


Directions:
Cut up one cube of butter and melt in large fry pan. Add enough flour to soak up all the butter. Add milk. Cut up the Velveeta Cheese into medium sized cubes and add the sauce. Stir on low heat until desired thickness. Add shredded chicken to sauce.

Veggie Pizza

I don't have pictures of this one but it's a favorite!

Pillsbury Pizza Crust
Garden Veggie Cream Cheese
Green Peppers
Broccoli
Carrots

As much as you want.

Cut/Chop up all the veggies.  We use a Pampered Chef Chopper to chop up all the veggies finely so they are easy to eat and enjoy.

I have had people at work request that I make it and it's amazing.  A perfect appetizer, snack, or party tray.  Either way, its a great way to enjoy veggies!!!!
