One Dish Chicken & Rice

Sorry it's been a while since we have posted. Don't worry, we're still cooking and looking for fun recipes. It's just been really busy around here. I've had some photo shoots with families and a few weddings that kind of took priority. But here is a perfect recipe that is super easy to make and takes no time at all and is great for left overs or to make in advance.

Ingredients:
1 10 oz can of Cream of Chicken
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup mayonnaise
2 cups chopped cooked chicken
1/2 chopped onion (optional)
1 cup peas or broccoli
2 cups white rice (cooked)
1 cup shredded cheese


Preheat oven to 350*

Blend soup and milk, salt, pepper, and mayo in bowl. 



After the chicken is cooked, either cube or shred it. 
(Trick: 4 or less tenders of chicken cook in the microwave for 2 minutes and then another 2 minutes and it will be cooked. Do NOT do 4 straight minutes. It will over-cook.
8 or more tenders of chicken, cook in microwave for 4 minutes and then 4 minutes again. Same thing., if you do it for 8 minutes it will over cook.)
Fold chicken into mixture.



Fold in your cooked rice.


Fold in your peas.


Fold in half of your cheese.


Spray casserole dish and pour in casserole.


Sprinkle top with cheese. Bake 20 minutes.


This is a great dinner and it's super easy. The left overs are even better. I hope you enjoy this as much as we do.
