{wednesday weekly meals} Buffalo Chicken Lettuce Wraps

This is a great appetizer or dinner for two on a hot summer night!
With this recipe I learned a whole new way to cook chicken and I'm excited to share it. 
This is also a very low calorie dinner.

Ingredients
3 Boneless, Skinless Chicken Breasts
1/2 to 1 cup Famous Dave's Rich and Sassy BBQ Sauce
1/4 cup Sour Cream
Bibb or Butter Lettuce
Sliced Chives
Sprinkle of Blue Cheese (optional)


Directions
Bring a saucepan of water to boil

Add chicken and reduce to a simmer and let cook for 12-15 minutes 
(or until the chicken is cooked through to 160 degrees with thermometer)


Using fork or cookie paddle with a stand mixer, shred chicken

Combine BBQ sauce and sour cream and chives with your chicken



Scoop chicken into individual lettuce leaves


Eat like a taco!
