{wednesday weekly meal} Cilantro Lime Rice

Happy Wednesday Everyone!!!!

Like I promised a long time ago, there are a few meals that we did before I got too sick and before we moved.
We had the missionaries over for dinner one night and we made Cafe Rio Chicken.
I wanted to make something to go along with it, so we tried the rice for the first time. 
I loved it. 
Here is the recipe. We hope you enjoy it as much as we did!!

Ingredients
2 tablespoons Butter, Pepper to taste
1 1/4 cup Rice (recommend long grain)
Juice and Zest from 1 large or 2 small Limes
2 1/4 cups Chicken Broth
2 tbsp chopped Cilantro
3/4 tsp Salt
1/4 tsp Cumin


Directions
In a skillet, melt butter with rice


Add liquid and other ingredients


Bring to a boil, reduce eat and cover

Cook for 20 minutes or until rice is done

{Tuesday Tip #33} Meatloaf in Muffin Tins

This is both a tip and a recipe to share.
I found this cool idea on Pinterest about how to make meatloaf easier. 
If meatloaf isn't already easy to make.
It takes longer to make meatloaf the traditional way but this way is super simple.
All you do is make your meatloaf how you would any other way and instead of placing it in a loaf pan, you make smaller servings and put them in a muffin tin for baking.


Here is the recipe for meatloaf that I got from my mother.

Ingredients
1 lb ground beef (or elk)
1 Egg
1/2 cup Bread Crumbs
Salt & Pepper
1/3 cup Steak Sauce
1/4 cup Ketchup
dash of Garlic and Onion Powder
(rough estimates)

Directions
Preheat oven to 450 degrees

Thaw meat

Mix together

Grease muffin tins and scoop meatloaf into muffin tins

Bake for 20 minutes

Serve with rice and veggies

Enjoy!!!

Our New Kitchen in our New House

I LOVE our new kitchen, so much better than our old place.
It is brighter and bigger (well it feels bigger).
You have seen a few small glimpses of our old kitchen from the cooking posts. 
I don't have official images of our new kitchen, but here are a few shots of our first home cooked meal in our new kitchen.



We moved from a gas stove to an electric stove. 
It was a harder adjustment than I thought it would be. 
I was so excited to get a flat top stove for the extra counter space and it has been great. 
I don't have to worry about anything falling down into the flames or worrying about the gas.
But it has taken some time to get used to the heating processing of an electrical stove. 
It takes longer to warm up and doesn't cook evenly.
BUT
I'm learning and it's been great.
Our first meal was Schnitzel.
I burned the chicken and the rice because I didn't turn the heat up enough and then I turned it up too high and well... it's was a mess.
But over the last month or so I've learned better when to start heating things and to have patients with cooking.

{Tuesday Tip #32} Decorated Pie

This is not exactly a tip or a new recipe or anything like that but I wanted to share something new that I tried.
This is an apple pie that I made for a friend of ours and everything turned out perfect. 
Marvin was jealous that it wasn't a pie for him. 
I need to make him one. 
I was going to try and make Raspberry Turnovers and an Apple Pie for him last Saturday but I was busy getting posts together and didn't have a chance.
Maybe I can try on Sunday...

So what I did.... I made this Apple Pie and then I wanted to try something new that I found on Pinterest.
It was little pies in jars and then someone made a leave out of the pie crust and put it one top as decoration.
I can't seem to find it anywhere though!
I know I pinned it but I can't seem to find it.

Anyway...

I was so impressed with how well it turned out. 
This is how I'm going to do my pie for Thanksgiving this year. 
All my life my mom has drawn in her pies.
Names, initials, pictures
But now...
Now I have a creative string to add and place on top. 
Thanksgiving's pie will be better then this one.
But I had to share my success!!!

Now if only I can find the pin for the jar pies......

Happy Monday!!!

I finally got all of my meals written and scheduled.
And you'll never guess how far in advance I'm all scheduled out for....!!!
I am all scheduled out into January!!!!

See, I told you that we have been making new meals this whole time but I just haven't had time, the desire or the internet to post all of the fun things that I've learned. 
I didn't realize how many meals I had put together and had done in the last several months until I sat down and started drafting everything. 

While I'm out on maternity leave, I've got a lot of crafting things I want to work on.
I'm excited to post those so maybe I'll be able to relax on the new meals for a few weeks and work on crafty things and make a new addition to my blog. 
But I'm also trying to remind myself, not to stress myself out postpartum.

I hope that you enjoy the recipes that are coming and the few tips that I have scheduled so far.

Good News!!!!

WE HAVE INTERNET!!!!!!

We finally got internet last night! 
I got my Netflix back up and running and I'm getting caught up on my Bones episodes and working on my meal posts.

I'm 36 1/2 weeks pregnant and we're expecting the baby anytime in the next few weeks.

I dropped a lot in a week

I have to say that its a bittersweet ending. 
I love feeling the movements but at the same time they hurt since he has been getting so much bigger.
I love my cute basketball belly but I'm so ready to be in my non-pregnant cute fall clothes.

Hopefully in the next few weeks I'll have all my posts scheduled for live viewing.
I have a few saved as drafts already but I'm kind of saving them, stock piling you know. 
So I don't feel so overwhelmed later.

Can I ask a question to all you mothers out there?
Were you overwhelmed after your baby was born?
I haven't done pre-cooking for freezing any dinners or anything.
I feel that will be release for me. An outlet....
Is that weird???

Well, off I go to work on my posts.

Small Update:

Hello Everyone!!! 

I just wanted to give you all a little update that we still don't have the internet yet at our new place.
(I'm at my parents house writing this up. We live outside of town now and I can't exactly grocery shop on my own anymore so I have to wait until Marvin gets off work so we can eat dinner and shop together. I'm pretty much at the 'I'm-useless' stage.)
I'm still finding and cooking new meals and it's really frustrating to me that I can't do anything about it. 
At this point I can't even type up the posts let alone put the pictures on my computer because every time we open it up and start working it freezes.
Any of you Mac users?
Familiar with the 'beach-ball of death'???
I have to take it in and see if there is anything that can be fixed or if we're out of luck and have to purchase a new computer. 
I've had my Mac since before I went to photography school (so about 4 years) and it's been through a lot. I'm crossing my fingers it can be fixed as we're a little tight with money right now.

I hope that you have all had a fantabulous Friday and that your weekend is going to be relaxing as we head into General Conference. 
I'm really excited to be able to sit down and listen. I have to tell you, that since being pregnant I have felt a strong desire to study scriptures more and really pay attention to all things spiritual. 
I love how our baby isn't born yet and he is inspiring me to learn and grow!

I have found several cool things lately that I want to share with you that might help you out with paying attention or growing spiritually during conference. 
I have the Pinterest app on my iphone and I have been on there growing my recipe board and everything else since that is pretty much all I can do.
While I've been on Pinterest, I've found this amazing blog called The Red Headed Hostess.
You really just need to click on that link and go explore her blog.
Be beware... once you get there, you may loose track of time.
Do you have some time to loose?
I PROMISE it will be well worth it!!!!!!!!
Just to wet your palate, she has all these different kinds of books that she has designed to help you study your scriptures, tips on how to study your scriptures, marking suggestions, scripture master flash cards... 
And the list goes on.
Trust me, just go check it out!

So what I wanted to share with you are her General Conference Note Taking Packet.
It's genius!!!



Here is just a sample of what the pages look like.
But if you click on the link above or the image you should be able to jump over The Red Headed Hostess' Blog and print out the PDF version that she has available so that you can take notes and remember the impressions you had.
Now with some speakers I tend to take A TON of notes so I may have to end up on the back of each page but that's okay. There is room for that!!!
I'm excited to make a binder of notes!
Then when little one is older, he'll be able to go back and read it and have a reference if need be for talks and things like that.

Now the other cool thing that I found, for those of you who have little ones, is this General Conference Bingo. I wish that I had something like this when I was little.


The only thing that I remember from when I was little was I colored A LOT!!!
Every Saturday between sessions we would go to this restaurant called Boston Market and get 'linner'. Best mashed potatoes EVER!!!
This was also back when they didn't have it available to listen to over the radio, unless you were in UT, and you had to go to the church to watch it.
Then on Sundays we would pack a little lunch and have a picnic at the church between sessions because we lived about 30-45 minutes from the stake center.
Saturdays we would listen in the Relief Society Room, but on Sundays, we were in the Chapel.
Those are some fun memories.

I also don't remember really taking notes until I was in College. I'm sure I did, but I have no idea where they are and I can't recall even a faint memory of listening to conference.
It wasn't until College that I really start to have memories of going to watch and listen to Conference and the Institute and I think that is really when I started to "partake of living waters".

I hope that these two things help you guys out this weekend and you'll have to let me know what you think.
