{wednesday weekly meal} Cilantro Lime Rice

Happy Wednesday Everyone!!!!

Like I promised a long time ago, there are a few meals that we did before I got too sick and before we moved.
We had the missionaries over for dinner one night and we made Cafe Rio Chicken.
I wanted to make something to go along with it, so we tried the rice for the first time. 
I loved it. 
Here is the recipe. We hope you enjoy it as much as we did!!

2 tablespoons Butter, Pepper to taste
1 1/4 cup Rice (recommend long grain)
Juice and Zest from 1 large or 2 small Limes
2 1/4 cups Chicken Broth
2 tbsp chopped Cilantro
3/4 tsp Salt
1/4 tsp Cumin

In a skillet, melt butter with rice

Add liquid and other ingredients

Bring to a boil, reduce eat and cover

Cook for 20 minutes or until rice is done
