{wednesday weekly meal} Avocado Egg Salad

Happy Wednesday everyone!!!

Sorry this post is so late today. I didn't realize that I was out of the pre-scheduled posts from before I had my baby. But you're in luck!

I was cruising around Pinterest the other and I found a great and rather tasty healthy lunch! I hope that you enjoy it as much as I do. I'm so glad that I have a healthy recipe to take with me when I go back to work.
 (Going back to work is a touchy subject right now, but being healthy is important to me  to help me loose the last remaining weight.)

Ingredients
4 Hard Boiled Eggs
1-2 Avocados, depending on the size
2 tbsp Mayo (or desired condiment)
Curry to taste (optional)
