{Wednesday Weekly Meal} Chow Mein

I love Chinese Food!!! We had tried some Chow Mein from Panda Express and we both liked it and thought that we would make our own. We found this Chow Mein Recipe and tried it out.

We both feel like it needs more flavor, however, we were curious if it was because of the noodles that we used. The recipe calls for Yakisoba Noodles. We couldn't find any so we use Ramen Noodles. It works, but like I said we were curious if the Ramen Noodles don't hold the flavor the same way.


So we decided to try it again!! This time I found noodles in the Asian Section of the grocery store (I shop at Walmart) that are Chow Mein Noodles and they are called Chuka Soba Noodles. We decided to add more cabbage this time and celery. Last time we only used celery seed which was just fine. Our opinion...... I don't think the Ramen Noodles hold flavor the same way. I also may have added a little more garlic then we did last time. But I felt like there was more flavor the second time around the Chuka Soba noodles seemed to add flavor as well. Use what you have it and give it a try! Let us know what you think!!

Ingredients
1/4 cup Soy Sauce
1 tbsp Brown Sugar
1-2 cloves grated Garlic
1 tsp fresh grated Ginger
Black Pepper, to taste
2 tbsp Vegetable Oil
15 oz Yakisoba Noodles (about, or Chuka Soba Noodles)
2/3 cup Celery, chopped diagonally
1/2 of a medium Onion, thinly sliced
2+ heaping cups chopped Cabbage

Directions
In a small bowl combine soy sauce, brown sugar, garlic, ginger and black pepper then set aside.

Remove noodles from packaging and discard flavor packaging. 
(If using Yakisoba Noodles, rinse noodles, drain and set aside. If using Ramen of Chuka Soba Noodles, cook according to package directions and set aside.)

Heat oil in a large wok or skillet, add celery and onion and saute for several minutes until onions become soft and transparent. 

Add cabbage and saute another few minutes until soft.

Add noodles and soy sauce mixture and heat for an addition 2-3 minutes or until noodles are heated through.

Serve immediately! :)

{Wednesday Weekly Meal} BBQ Pulled Chicken with Baked Potatoes

I had been having a craving for Famous Dave's Loaded Baked Potato with pulled BBQ Chicken. Why? I'm not sure. It had been a few days and I just couldn't shake the yummy taste in my mind and mouth. So instead of spending the money to go out, I found recipes online! :) It may sound weird, but trust me, it tastes amazing together!!

Here is a BBQ Chicken recipe that I found. It tasted delicious!!




Ingredients
2lbs Boneless Skinless Chicken Breast
1 tbsp Onion Powder
1 tbsp Garlic Powder
2 tsp Chili Powder
1/2 tsp Salt
1/2 tsp Pepper
1 cup Root Beer
1 cup BBQ Sauce

Russet Baking Potatoes
Olive Oil
Salt 
Pepper

Directions
Mix together the dry ingredients and rub on the chicken then place the chicken in the crockpot, top with BBQ sauce and Root Beer.

Cook on HIGH for 3 hrs.

With a little more than hour remaining, preheat oven to 425*, scrub potatoes, fork them, rub with olive oil, S&P, and place on a baking sheet.
(For soft potato skins wrap in foil before placing on baking sheet.)

Cook the potatoes for about 45-60 minutes.

With about 30 minutes remaining, remove the chicken, shred it and return to crockpot.

I like to cut open my potatoes, smother with butter, add the BBQ Pulled Chicken, sprinkle cheese on top and add a daulup of sour cream :)
Hmmmmmm!!

{Wednesday Weekly Meal} Taco Chili

Today's recipe is an adaptation from this great Chili Pasta Bake. We liked the recipe and that it tasted like tacos. But we weren't fans of the noodles since it tasted more taco-y than something to go with pasta. So we decided to take out the pasta and make it a straight chili.

Eat plain or with rice, or serve over a salad! This is a great quick dinner!!



Ingredients
1/2 tbsp Vegetable Oil
Onion Powder
1 lb Ground Meat (Elk)
Salt
Pepper
15 oz Tomato Sauce
14 1/2 oz Canned Diced Tomatos and Green Chilies
15 oz canned Black Beans, rinsed
1 1/2 tbsp Chili Powder
2 tsp Cumin
2 dashes Cayenne Powder
1/4 cup Water
Mozzarella or Shredded Cheddar Cheese
Sour Cream
Green onions, chopped

Directions
Drizzle oil into a large skillet on medium-high heat.

Brown ground meat with several dashes of onion powder, salt and pepper.

Add the tomato sauce, diced tomatoes and green chilies, beans, chili powder, cumin, cayenne and water.

Stir and let simmer for about 5 minutes.

Top with cheddar or mozzarella and a dollop of sour cream.

Serve!

This is great recipe to freeze. Just store in gallon size freezer bags (or smaller for portions) and pull out when you're ready to eat!

{Wednesday Weekly Meal} Taco Meat

I LOVE tacos!!! Anything taco or mexican is my favorite and has been since I was a little girl. I don't like using the prepackaged taco seasons you get at the store. They taste too salty for me. So for a while I was using Wildtree Taco Seasoning which I love!! But it hasn't been in the budget to buy the bulk stock we need for how often we make taco meat. So I went look for a taco meat recipe and stumbled on The Pioneer Womans Beef Taco Recipe and gave it a whirl. I've done it twice now and love it! Not too seasoned, not too spicy and we use Elk Meat.


Ingredients
1 tbsp Olive Oil
1/2 Yellow Onion, diced
2 lbs Ground Beef/Game
1/2 tsp Chili Powder
1/2 tsp Cumin
1/2 tsp Paprika
1/2 tsp Salt
1/2 tsp Ground Black Pepper
1/4 tsp Crushed Red Pepper 

Directions
In a skillet over medium-high heat add the olive oil and onions, cook till softened.

Add ground beef and brown, drain fat.

Add chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine.

Add 1/2 cup hot water and stir.

Reduce heat to low and simmer for 15 minutes

Serve with favorite taco toppings!!! :)

{Family Home Evening} Simplify

I'm going to be really honest here. With the holidays I have not been as good at preparing a FHE lesson. We have used FHE as an opportunity to either run errands or just relax and be a family together. And guess what.... that is ok! 

This past Monday we had just gotten home from traveling and I wasn't feeling good so we went to the grocery store as a family and then picked up some pizza and had a picnic and watched some football. It was nice to just be!


Ponderize 13

With Christmas and New Years I got so busy and distracted that I just kept the same scripture to ponderize for two weeks. 
Then yesterday as I was reading, I found a new one that touched my heart. So this weeks Ponderizing that I'm sharing is actually the one I'm pondering this week!!
